Jest absolwentem Wydziału Wokalno-Aktorskiego Akademii Muzycznej we Wrocławiu. Debiutował w Teatrze Wielkim w Łodzi partią Ismaela w Nabuccu Verdiego i z tym teatrem związany był przez wiele kolejnych lat. Obecnie jest tzw. wolnym strzelcem i od blisko 20. lat współpracuje z większością polskich teatrów operowych; często jest gościem także zagranicznych teatrów operowych.
Wśród najważniejszych ról w karierze artysty są m.in.: Alfred w Traviacie Verdiego, Don José w Carmen Bizeta, Ismael w Nabuccu Verdiego, Maurizio w Adrianie Lecouvreur Cilei, tytułowy Kandyd Bernsteina, Chopin w Kochankach z klasztoru Valldemosa Ptaszyńskiej, Artur w Łucji z Lammermoor Donizettiego.
Tomasz Jedz wziął także udział w nagraniu musicalu Upiór w operze A.L. Webbera w partii Ubaldo Piangiego, za które został laureatem dwóch Platynowych płyt.
